Grilled Upside Down Pizza   Leave a comment

This is a great way to make a pizza on the grill that doesn’t take any special equipment.

First make some fresh pizza dough.

(Try in large bowl, 1 cup warm water, 1 spoonful sugar, 1 sp yeast, stir, wait 4 minutes. Add 1 sp olive oil, 1/2 spoonful salt, stir. Add 3 cups flour, stir and make into ball. Work/knead ball for 2 to 3 minutes, set aside for 30 minutes.)

Roll out. Get it really thin in the middle.

Place on cleaned and oiled grill over medium high heat.

Brush with olive oil and sprinkle with kosher salt

Wait 2 minutes but don’t let it burn, then flip it over. (look how unevenly my grill heats.) Rotate if necessary.

Brush with olive oil and sprinkle with kosher salt. Then immediately cover with cheese, close the lid and wait 1 minute.

Cover with a thin layer of sauce (pasta sauce is fine) and any toppings you’d like. Close lid and wait 1 more minute.

(Lift up side of crust to make sure it isn’t burning.)

Slice up and serve.

The advantage of this method is that the cheese melts quickly because of the heat of the crust.  If you put the sauce down first it can take a lot longer for the cheese to melt and often the curst burns. Try it and let me know what you think.  We thought the texture of the crust was really great, crunchy on the outside and soft on the inside.
